Apple PALEO MUFFINS

INGREDIENTS
- 200 grams almond flour (about 2 cups)
- 1/2 teaspoon baking soda
- 1/8 teaspoon sea salt
- 2 teaspoons cinnamon
- 1 large apple, grated and drained
- 1 tablespoon lemon juice
- 3 eggs
- 1/4 cup honey
- 2 tablespoons ghee, melted
INSTRUCTIONS
- Preheat oven to 325 degrees and grease or line muffin tin.
- Combine dry ingredients in large bowl. Toss grated apple with lemon juice in medium bowl. Add remaining wet ingredients and combine. Stir wet ingredients into dry ingredients.
- Using a large ice cream or cookie scoop, fill muffin cups 3/4 full.
- Bake for 20 - 25 minutes, until golden brown and toothpick inserted in center comes out clean. Cool on wire rack.
MEXICAN dINNER
ALMOND FLOUR TORTILLA CHIPS
Ingredients: 1/4 cup almond flour 2 medium egg whites 1/2 teaspoon salt 1/2 teaspoon cumin 1/2 teaspoon garlic powder Instructions: 1. Preheat oven to 350 degrees. 2. Combine all ingredients together into a dough form. 3. Role out thin and cut into desired shape. 4. Put onto baking sheet (with parchment paper) and bake for 10 minutes. HOMEMADE SALSA Ingredients: 1 box of grape tomatoes Chopped Garlic (as desired) Dash of Salt 1 lemon Olive Oil (as desired) Instructions: 1. Cup tomatoes to desired size and then mix ingredients. 2. Feel free to add as little or as much of each ingredient listed. HOMEMADE GUACAMOLE Ingredients: 1 Avocado 1 Diced Tomato Diced Red Onion (as desired) 1 Lime Dash of Salt Instructions: 1. Cut avocado into cubes and then with a fork smash into a guacamole consistency. 2. Add remaining ingredients and add salt to taste. This meal was completed with ground beef seasoned with a taco mix and onions/green peppers sautéed to completion. |
MY "GO TO" MEAL
LEMON "PEPPER" CHICKEN BREASTS
Ingredients: 3 Chicken Breasts (I buy them frozen in a bag of about 7 - Tyson's Brand) 1 Lemon Salt Pepper Rosemary Garlic Powder Instructions: 1. Defrost chicken breasts (if frozen) 2. Season breasts with the salt, pepper, rosemary, and garlic powder to desired taste in a large bowl. 3. Squeeze lemon on top and let that marinate for about 30 minutes. 4. Take a frying pan with "butter"* on low heat and cook breasts evenly on both sides. (I cook them in the marinate with all the juices to get the maximum flavor out of the lemon.) 5. Serve immediately for best taste. ROSEMARY SWEET POTATOES Ingredients: 2 Sweet Potatoes Salt Pepper Rosemary Olive Oil Instructions: 1. Peel and dice sweet potatoes to desired size. 2. Cover and mix with the olive oil and herbs to desired taste. 3. In a pan on low heat cook until soft all the way through. GARLIC GREEN BEANS Ingredients: 1 Package of Green Beans Minced Garlic Olive Oil or Butter* Instructions: 1. In a pan on low heat cook the garlic with either olive oil or butter* for about a minute. 2. Add the Green Beans and cook until beans are tender and soft. This is a very simple and quick meal which is great for on-the-go or to make in the beginning of the week for ready to go meals. *Butter: I use the Earth Balance - SOY FREE butter, they sell this at most grocery stores.* |
ALMOND FLOUR BISCUITS

Ingredients: 3 cups Almond Flour 1 teaspoon Baking Soda 1/4 teaspoon sea salt 2 Eggs 2 tablespoon Honey 1 tablespoon Lemon Juice Directions: 1. Preheat oven to 325 degrees. 2. Combine ingredients into a large mixing bowl. 3. On parchment paper scoop our chunks (I used a 1/4 cup measuring spoon) and then flatten them using a separate piece of parchment paper. (top image) 4. Bake for about 10-15 minutes or until cooked thoroughly and golden brown on the outside. 5. Serve the final result with some honey or any desired side and enjoy! Mine turned out more like scones than biscuits, still taste amazing but flatten them less than I did for the full biscuit effect. Especially if you want to put meat or something inside of it. |
